IRISH SODA BREAD - It's uniqueness lies in the use of baking soda as a leavening agent rather than the commonly used yeast cultures. To activate the baking soda, soured milk-- usually buttermilk-- is added to the dough. The result is a dense yet tender dough with a slight tang from the buttermilk and a harder crust on top. Raisins folded into our loaf add little bursts of sweetness throughout the dough.
